Happy Autumn!
For those of you who don't know me well, I just need you to understand that this is my favorite season. I absolutely love this time of year! I love the crisp mornings, the smell in the air, the trips to the apple & pumpkin farm and of course, time with my family. What is my absolute favorite thing to do during this season? I love baking up tasty fall treats, and that is exactly what we did today to celebrate.
Last weekend, we got some fresh apples from the farm. There really is nothing like a peck of fresh apples. They look, smell and taste better than anything you could ever buy in the supermarket. Not to mention, it's fun to go there and spend some quality time with your loved ones. We ate most of them, but had a bunch left over, so I decided we would make an apple crisp today. Luckily, we wouldn't have to eat it on our own (and I know we would) because we are having company this weekend.

Vegan Apple Crisp
Ingredients
Filling:
- 6 1/2 cups of apples
- 4-5 teaspoons of lemon juice
- 1/4 cup organic sugar
- 1/4 cup organic brown sugar
- 3/4 teaspoon cinnamon
- 1/4 teaspoon sea salt
- 2 tablespoons tapioca starch
Topping:
- 3/4 cup organic brown sugar
- 1/2 organic flour (for this particular recipe I used coconut flour, as my company is gluten free)
- 3/4 cup organic oats
- 1/4 teaspoon sea salt
- 2 tablespoons coconut oil, melted
- 1/3 cup vegan butter, melted (I used Earth's Balance - coconut)
Instructions
1. Peel and cut apples into chunks. Place in a large bowl.
2. Add ingredients for the filling to the bowl and toss with the apples until well combined.
3. In a separate bowl, combine all the ingredients for the topping (except oil & butter).
4. Melt the coconut oil and vegan butter before adding to the mixture.
5. Pour apple mixture into a prepared pan.
6. Cover evenly with the topping.
7. Bake at 350 degrees for 45-60 minutes, really until the apples are bubbling and the top is browning.
8. Allow to cool for 30 minutes + before serving.
9. Enjoy!
